Also known as ramps, wild leeks are increasingly rare in the woods. While deer avoid them, we humans consider them a delicacy, and we all know what comes of that. Now you can start your own little protected patch of ramps, clipping just a enough leaves for flavor. Best not to pull the bulbs; they are very slow to reproduce (5 to 7 years). Wild leeks prefer dappled sunlight in early spring and can tolerate considerable shade in later months.

Please note that all parts of this plant are mildly toxic, but they can be eaten safely in small amounts.
